INGREDIENTS
3 sheets Whole Wheat Phyllo Dough
3 cups Fresh Spinach (packed)
80 grams Feta Cheese
2 large Eggs
1/4 cup diced Yellow Onion
1 teaspoon Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F (190°C). Lightly grease a baking dish with a little olive oil.
In a non-stick skillet, heat the teaspoon of olive oil over medium heat. Sauté the diced onion until translucent, about 3 minutes.
Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
In a mixing bowl, whisk the eggs and then stir in the crumbled feta cheese. Add the sautéed spinach and onions. Season with salt and pepper, and mix until well combined.
Lay one phyllo sheet in the bottom of the greased baking dish. Spoon a portion of the spinach-feta mixture on top. Layer a second phyllo sheet over the mixture, then add the remaining filling, and top with the final phyllo sheet. Lightly press down to secure the layers.
Bake in the preheated oven for 20-25 minutes until the phyllo is crisp and golden around the edges.
Remove from the oven and let cool for a few minutes before slicing. Serve warm and enjoy your crispy, savory phyllo pie.
