INGREDIENTS
250g Firm Tofu
150g Shelled Edamame
50g Shredded Carrot
50g Spinach
1 tsp Sesame Oil
1 tbsp Cornstarch
1 tbsp Sesame Seeds
1 tbsp Low-Sodium Soy Sauce
1 tsp Fresh Grated Ginger
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
In a bowl, toss the tofu cubes with cornstarch until evenly coated.
Heat the sesame oil in a non-stick pan over medium-high heat. Add the tofu and fry until all sides are golden and crispy, about 3-4 minutes per side.
While the tofu is cooking, prepare the vegetables. Place the shelled edamame in a small saucepan with a little water and steam for 3-4 minutes until tender. In a separate bowl, combine the shredded carrots and spinach.
In a small dish, whisk together the low-sodium soy sauce and freshly grated ginger.
Assemble the power bowl by layering the steamed edamame and fresh vegetables. Top with the crispy tofu, drizzle the soy-ginger dressing over the bowl, and sprinkle with sesame seeds.
Serve immediately and enjoy your protein-packed, flavorful power bowl.
