PREPARATION
Preheat your oven to 400°F. Wash the baby potatoes, then toss them in olive oil, salt, pepper, and a few torn rosemary leaves.
Spread the potatoes on a baking sheet and roast in the oven for about 20-25 minutes until tender and slightly crispy.
While the potatoes roast, pat the steak dry and season both sides generously with salt and pepper.
