INGREDIENTS
7 ounces Shrimp
1 cup Cauliflower Rice
2 tsp Olive Oil
2 cloves Garlic
2 Tbsp Lemon Juice
2 Tbsp Fresh Herbs (Parsley & Basil)
Salt & Pepper to taste
PREPARATION
Pat the shrimp dry with a paper towel and season lightly with salt and pepper.
Heat 1 teaspoon of olive oil in a skillet over medium-high heat. Add the garlic and sauté for about 30 seconds until fragrant.
Add the shrimp to the skillet and sear for about 2-3 minutes on each side until pink and opaque. Squeeze half of the lemon juice over the shrimp during the last minute of cooking.
In a separate pan, heat the remaining olive oil over medium heat. Add the cauliflower rice and sauté for 3-4 minutes until it is tender but still retains some crunch.
Stir in the fresh herbs and the remaining lemon juice into the cauliflower rice, seasoning with a pinch of salt and pepper.
Plate the herb cauliflower rice and top with the garlic-lemon shrimp. Serve immediately and enjoy.
