INGREDIENTS
5 oz Salmon Fillet
1/2 cup cooked Quinoa
2 tbsp Fresh Parsley
2 tbsp Fresh Dill
1 tsp Olive Oil
1 tsp Lemon Juice
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Pat the salmon fillet dry with a paper towel and season lightly with a pinch of salt and black pepper.
In a small bowl, mix the chopped fresh parsley and dill with the lemon juice and olive oil.
Press the herb mixture evenly onto the top side of the salmon fillet to form a crust.
Heat a non-stick skillet over medium-high heat. Once hot, place the salmon, herb side down, in the pan.
Sear the salmon for about 3-4 minutes until the herb crust is golden, then carefully flip and cook the other side for an additional 2-3 minutes until the salmon reaches your desired doneness.
While the salmon is cooking, warm the cooked quinoa in a small pot or microwave, seasoning lightly with a pinch of salt if desired.
Plate the seared salmon atop a bed of quinoa and serve immediately, garnished with an extra sprinkle of fresh herbs if desired.
