INGREDIENTS
6 oz Salmon Fillet
1.5 cups Green Beans
1 cup Cauliflower
1/2 cup Nonfat Greek Yogurt
1.5 tsp Olive Oil
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick pan over medium-high heat and add olive oil.
Sear the salmon, skin-side down first if applicable, for about 3-4 minutes per side until the salmon is nicely browned and just cooked through. Remove from pan and set aside.
Meanwhile, steam the cauliflower florets until tender. Transfer to a bowl and mash with nonfat Greek yogurt, a pinch of salt, and pepper until smooth.
In the same pan, add minced garlic and sauté briefly until fragrant. Add green beans and sauté for 3-4 minutes until crisp-tender. Season with salt and pepper.
Plate the mashed cauliflower as a base, arrange the garlic green beans atop, and place the seared salmon on the side. Serve immediately.
