PREPARATION
Preheat a non-stick pan over medium heat.
Lightly toast the whole wheat bread slices in the pan until slightly crispy.
Layer the toasted bread with basil pesto on one side.
Add slices of fresh mozzarella on top of the pesto.
Place thinly sliced ripe tomato over the cheese, and then add the grilled chicken breast pieces.
If desired, add a little extra pesto over the chicken, then place another layer of mozzarella.
Close the sandwich with the remaining bread slice, pesto side down.
