INGREDIENTS
4 oz Chicken Breast
2 Corn Tortillas
1 tsp Olive Oil
1 medium Tomato
1/4 cup Red Onion
2 tbsp Cilantro
1 tbsp Lime Juice
1/2 tsp Ground Cumin
1/2 tsp Garlic Powder
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F and prepare a baking tray lined with parchment paper.
Dice the chicken breast into small bite-sized pieces, then season with salt, pepper, ground cumin, and garlic powder. Drizzle with olive oil and toss well.
Lay the corn tortillas on a clean surface. Evenly distribute the seasoned chicken pieces along the center and roll tightly to form taquitos.
Place the rolled taquitos seam side down on the baking tray. Bake in the preheated oven for 15-18 minutes, or until the tortillas become crispy and the chicken is fully cooked.
While the taquitos are baking, prepare the fresh salsa by dicing the tomato and red onion. Finely chop the cilantro and combine with the tomato and onion in a bowl.
Drizzle the salsa with lime juice and season with a pinch of salt and pepper. Mix well to combine all the flavors.
Remove the taquitos from the oven and serve warm with a generous spoonful of fresh salsa on top or on the side.
