INGREDIENTS
6 oz Salmon Fillet
1 cup Fresh Asparagus
1 tsp Olive Oil
1 tsp Dijon Mustard
1 tbsp Fresh Parsley (Chopped)
1 tsp Garlic Powder
1 tsp Lemon Zest
Salt & Black Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper and arrange the asparagus spears. Drizzle with olive oil, and season lightly with salt and pepper. Toss to coat evenly.
Place the salmon fillet on a separate piece of parchment paper. In a small bowl, mix the Dijon mustard, garlic powder, lemon zest, and chopped parsley.
Spread the herb mixture evenly over the top of the salmon.
Season the salmon lightly with salt and pepper.
Place both the salmon and asparagus in the oven. Bake the salmon for 12-15 minutes until it flakes easily with a fork. Roast the asparagus for about 10-12 minutes until tender and slightly crispy.
Plate the salmon alongside the roasted asparagus and serve immediately.
