Toss the baby potatoes with a bit of olive oil, salt, and pepper, then spread them out on a baking sheet. Roast in the oven for 20-25 minutes until crispy and tender.
Meanwhile, pat the sirloin steak dry with a paper towel and season generously with salt and pepper on both sides.
Heat a heavy skillet (preferably cast iron) over medium-high heat until very hot. Add the steak and sear for about 3-4 minutes per side for medium-rare, or adjust to your preferred doneness.
