PREPARATION
Preheat your oven to 400°F.
Wash the baby potatoes and cut them in halves if they are larger; season lightly with salt, pepper, and a drizzle of olive oil if desired (olive oil can be omitted to keep close to macro targets).
Place the potatoes on a baking sheet and roast in the oven for 20-25 minutes until tender and crispy on the edges.
