INGREDIENTS
6 oz Salmon Fillet
1 small Sweet Potato (approx 150g)
1 tsp Olive Oil
1/2 tsp Turmeric Powder
1/2 tsp Ginger Powder
1 tsp Lemon Juice
Salt and Pepper, to taste
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Peel and cube the sweet potato into bite-sized pieces. Toss with olive oil, a pinch of salt and pepper, and spread evenly on the baking sheet.
In a small bowl, mix turmeric powder, ginger powder, lemon juice, and a little salt and pepper.
Place the salmon fillet on another baking tray lined with parchment paper. Brush the marinade evenly over the top of the salmon.
Place both the sweet potatoes and the salmon in the oven. Roast the sweet potatoes for about 25-30 minutes until tender and lightly caramelized, and bake the salmon for about 12-15 minutes until it flakes easily with a fork.
Serve the roasted sweet potatoes alongside the marinated salmon and enjoy this nutritionally balanced, flavorful dish.
