Savor a delightful twist on classic pasta with our Creamy Herb-Crusted Salmon paired alongside a silky, cauliflower-based Alfredo pasta. The dish features a tender, herb-infused salmon fillet, lightly crisped in olive oil, alongside a vibrant, creamy sauce made from cauliflower, Greek yogurt, and a hint of almond milk, perfectly accented by aromatic herbs.
INGREDIENTS
5 oz Salmon Fillet
2 cups chopped Cauliflower
1/4 cup Plain Nonfat Greek Yogurt
1/4 cup Unsweetened Almond Milk
1 tbsp grated Parmesan Cheese
1 tsp Olive Oil
1 clove Garlic
2 tbsp Mixed Fresh Herbs
Salt and Pepper to taste
PREPARATION
Preheat the oven to 400°F.
Season the salmon fillet with salt, pepper, and a portion of the mixed fresh herbs. Drizzle with olive oil and let it marinate for about 10 minutes.
Place the salmon on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until the fish flakes easily with a fork.
While the salmon is baking, steam the chopped cauliflower until tender, about 8-10 minutes.
In a blender, combine the steamed cauliflower, Greek yogurt, almond milk, garlic, Parmesan cheese, and the remaining herbs. Blend until smooth to create the creamy Alfredo sauce.
Heat a pan over medium heat and gently warm the sauce for 2-3 minutes, stirring continuously.
Plate a serving of the creamy cauliflower Alfredo pasta by spooning the sauce onto the plate. Top with pieces of baked salmon.
Garnish with a sprinkle of fresh herbs and a pinch of salt and pepper if desired before serving.
