INGREDIENTS
1 medium Bell Pepper (120g)
6 oz Ground Turkey (93% lean, 170g)
1/4 cup Cooked Quinoa (43g)
1/4 cup Diced Tomato (45g)
1/4 medium Diced Onion (25g)
1 teaspoon Olive Oil (4.5g)
2 tablespoons Fresh Herbs (Parsley & Basil)
Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F.
Slice the top off the bell pepper and remove seeds and membranes. Set aside.
In a skillet over medium heat, add the olive oil and sauté the diced onion until translucent, about 2-3 minutes.
Add the ground turkey to the skillet, cooking until browned, breaking it into small pieces.
Stir in the diced tomatoes, cooked quinoa, and chopped fresh herbs. Season with salt and pepper to taste. Let it cook for another 2 minutes until well combined.
Stuff the bell pepper with the turkey and quinoa mixture, pressing gently to pack the filling.
Place the stuffed bell pepper in a baking dish and cover with foil. Bake for 25-30 minutes or until the pepper is tender.
Uncover for the last 5 minutes if you prefer a slightly roasted top.
Remove from oven and allow it to cool slightly before serving.
