150g Extra-Firm Tofu
30g Pine Nuts
2 tbsp Nutritional Yeast
2 cloves Garlic
2 tbsp Lemon Juice
1 tsp Olive Oil
PREPARATION
Rinse and cut the broccoli into florets. Set aside.
Steam the broccoli florets until tender-crisp, about 5-7 minutes. Remove from steamer and set aside in a large bowl.
While the broccoli is steaming, drain and press the extra-firm tofu to remove excess moisture. Cut it into bite-sized cubes.
Heat the olive oil in a non-stick skillet over medium heat. Add the minced garlic (from 2 cloves) and sauté until fragrant, about 30 seconds.
