INGREDIENTS
300g Cauliflower
150g Silken Tofu
1/2 cup Green Peas
1/4 cup Chickpeas (for crumbs)
2 tbsp Nutritional Yeast
1 tbsp Tahini
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Steam the cauliflower florets until very tender, about 8-10 minutes.
In a blender, combine the steamed cauliflower with silken tofu, salt, and pepper. Blend until smooth and creamy.
Stir in the green peas and adjust seasoning if needed.
Transfer the cauliflower-tofu mixture into a baking dish.
For the crispy chickpea crumbs, lightly mash the chickpeas and mix with nutritional yeast, a pinch of salt, and pepper.
Evenly sprinkle the chickpea crumb mixture over the top of the cauliflower base.
Bake in the preheated oven for about 15-20 minutes, allowing the top to become slightly crispy.
Once baked, remove from the oven and drizzle with tahini for an extra layer of flavor before serving.
