INGREDIENTS
6 oz Turkey Breast Medallions
1 tsp Olive Oil (for turkey)
1 tsp Olive Oil (for green beans)
1 cup Green Beans
1 cup Cauliflower
2 tsp Butter
2 cloves Garlic
Pinch Salt
Pinch Black Pepper
PREPARATION
Pat dry the turkey medallions and season lightly with salt and black pepper.
Heat 1 teaspoon of olive oil in a skillet over medium-high heat. Sear the turkey medallions for about 3-4 minutes on each side until golden and cooked through. Remove from the skillet and keep warm.
In the same skillet, add 1 teaspoon olive oil. Add the minced garlic and sauté until fragrant, about 30 seconds.
Add the green beans to the skillet, tossing to coat with the garlic oil, and sauté for 4-5 minutes until they become tender-crisp. Season with a pinch of salt and pepper.
Steam the cauliflower until soft, about 8-10 minutes. Transfer to a bowl and mash with a fork or immersion blender.
Stir in 2 teaspoons of butter into the mashed cauliflower for added creaminess. Adjust seasoning with salt and pepper to taste.
Plate the turkey medallions alongside the garlic green beans and a generous serving of mashed cauliflower. Serve warm and enjoy.
