Crispy Sweet Potato Hash with Sunny Eggs
Enjoy a comforting plate of crispy sweet potato hash paired with sunny side up eggs and savory turkey sausage. The sweet potato offers a satisfying crunch while the eggs provide a rich, velvety contrast, complemented by vibrant red bell pepper and red onion for extra color and freshness.
INGREDIENTS
3 large Eggs (150g total)
1 turkey sausage link (50g)
1 medium Sweet Potato (150g)
1/4 cup diced Red Bell Pepper
1/4 cup diced Red Onion
1 tsp Olive Oil
PREPARATION
Preheat a large skillet over medium heat and add the olive oil.
Peel and dice the sweet potato into small cubes. Add to the skillet and cook for about 8-10 minutes until slightly tender.
Add the diced red bell pepper and red onion to the skillet, stirring occasionally. Continue cooking until the vegetables are softened and the sweet potato starts to crisp, about 5 more minutes.
In a separate pan, cook the turkey sausage over medium heat until it is warmed through and lightly browned, then slice it into rounds.
Nestle the turkey sausage into the sweet potato hash. Create small wells in the hash and crack an egg into each well. Reduce the heat to low, cover the skillet, and cook until the egg whites are set but the yolks remain runny, about 4-5 minutes.
Once done, season with salt and pepper to taste, and serve immediately.
