1 large Egg White

1 small Onion (~30g)
1 cup Spinach (~30g)
1 teaspoon Olive Oil
PREPARATION
Peel and dice the sweet potato into small, even cubes. Dice the red bell pepper and onion, and roughly chop the spinach.
Heat the olive oil in a non-stick skillet over medium heat. Add the diced sweet potato and sauté for about 8-10 minutes until they begin to soften.
Stir in the diced onion and red bell pepper, and cook for another 3-4 minutes until vegetables start to become tender.
Add in the turkey sausage slices, stirring to combine and warm through for about 2 minutes.
