INGREDIENTS
3 oz Chicken Breast (85g)
1 large Egg White (33g)
1/2 cup Whole Wheat Flour (60g)
1 tbsp Fresh Parsley (3g)
1 tbsp Fresh Dill (3g)
1 tbsp Fresh Chives (3g)
1/4 tsp Salt
1/4 tsp Black Pepper
2 tbsp Water
PREPARATION
Finely mince the chicken breast or pulse in a food processor until a coarse mince is achieved. In a bowl, combine the minced chicken with chopped parsley, dill, and chives, then season with salt and pepper.
In a separate bowl, mix the whole wheat flour with the egg white and water. Stir until a dough begins to form. If too dry, add a splash more water until a pliable dough is achieved.
On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Use a round cutter or a glass to cut out circles approximately 3 inches in diameter.
Place a teaspoon of the chicken and herb filling in the center of each dough circle. Fold the dough over to form a half-moon shape, then press the edges firmly to seal, creating dumplings.
Arrange the dumplings in a steamer basket lined with parchment paper. Steam over boiling water for about 10 minutes or until the chicken filling is fully cooked and the dough is tender.
Serve warm, optionally with a light dipping sauce such as low-sodium soy sauce mixed with a dash of rice vinegar.
