1 tbsp Grated Parmesan
1/4 cup Whole Wheat Breadcrumbs
1 large Egg White
3 ounces Grilled Chicken Breast
1 Whole Grain Hero Roll
Olive Oil Spray
3 Fresh Basil Leaves
PREPARATION
Preheat your oven to 425°F and line a baking sheet with parchment paper. Lightly spray the surface with olive oil spray.
Slice the eggplant into approximately 1/4-inch thick rounds. Set aside.
In a shallow dish, whisk the egg white. In another bowl, combine whole wheat breadcrumbs with grated Parmesan and, if desired, a pinch of salt and pepper.
Dip each eggplant slice first into the egg white, then dredge in the breadcrumb mixture, pressing lightly to adhere.
Place the coated eggplant slices on the prepared baking sheet. Lightly spray the tops with olive oil spray.
