INGREDIENTS
200g cauliflower, riced
2 large eggs
1/3 cup shredded mozzarella cheese (28g)
2 ounces turkey pepperoni
1 teaspoon olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
PREPARATION
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, mix the riced cauliflower with the garlic powder, dried oregano, dried basil, salt, and pepper.
Add the 2 eggs to the cauliflower mixture and stir until well combined. Fold in half of the mozzarella cheese to help bind the crust.
Spread the cauliflower mixture into a thin, even layer on the prepared baking sheet, shaping it into a circular crust.
Drizzle the teaspoon of olive oil evenly over the crust and bake for 15-20 minutes until it begins to turn golden and firm up.
Remove the crust from the oven, then top evenly with the turkey pepperoni slices and the remaining mozzarella cheese.
Return the pizza to the oven and bake for an additional 5-7 minutes, or until the cheese has melted and started to brown.
Allow the pizza to cool slightly before slicing and serving.
