INGREDIENTS
4 oz Chicken Breast
1/4 cup Whole Wheat Breadcrumbs
1/4 cup Grated Parmesan Cheese
1/4 cup Tomato Sauce
2 tbsp Fresh Mixed Herbs (Basil & Parsley)
Olive Oil Spray (3 sprays)
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Pat the chicken breast dry and season both sides with salt and pepper.
In a shallow bowl, combine the whole wheat breadcrumbs, grated Parmesan cheese, and finely chopped fresh herbs.
Lightly spray the chicken breast with olive oil spray to help the coating adhere.
Dredge the chicken breast in the breadcrumb mixture, pressing gently to ensure a uniform, crispy coating.
Place the coated chicken on the baking sheet and bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F and the coating is crispy.
About 5 minutes before the chicken is done, spoon the tomato sauce evenly over the top and return to the oven to warm the sauce.
Once baked, remove from the oven and let rest for a couple of minutes. Garnish with additional fresh herbs if desired and serve immediately.
