INGREDIENTS
6 oz Top Sirloin Steak
1 medium Baby Potato
1 tsp Unsalted Butter
1/2 tbsp Olive Oil
2 Garlic Cloves
1 sprig Fresh Rosemary
Salt & Black Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Wash the baby potato and cut it into halves or quarters depending on size. Toss with olive oil, chopped half of the rosemary, a pinch of salt and pepper.
Spread the potatoes on a baking sheet and roast in the oven for 20-25 minutes or until tender and slightly crispy, tossing halfway through.
While the potatoes are roasting, season the top sirloin steak generously with salt and black pepper.
Heat a skillet over medium-high heat. Add the steak and sear for approximately 3-4 minutes per side for medium-rare, adjusting cooking time to your preferred doneness.
In the last minute of cooking, add the unsalted butter and minced garlic to the skillet, spooning the melted herb-garlic butter over the steak.
Remove the steak from heat and let it rest for 5 minutes.
Plate the steak alongside the roasted rosemary potatoes. Garnish with the remaining chopped rosemary if desired and serve warm.
