Seared Salmon with Steamed Asparagus and Garlic Mashed Cauliflower
Enjoy a beautifully balanced dinner featuring a perfectly seared salmon fillet paired with tender steamed asparagus and creamy garlic mashed cauliflower enriched with a touch of nonfat Greek yogurt and olive oil for extra flavor and creaminess.
INGREDIENTS
6 oz Salmon Fillet
6 Asparagus Spears
1 cup Cauliflower Florets
1 Garlic Clove
0.33 cup Nonfat Greek Yogurt
1 Tbsp Olive Oil
PREPARATION
Pat the salmon fillet dry and season it lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down and sear for about 3-4 minutes until a golden crust forms. Flip the salmon and cook an additional 3 minutes or until your preferred doneness is reached.
While the salmon is cooking, steam the asparagus spears in a steamer basket over boiling water for about 4-5 minutes until tender-crisp.
In a small pot, add the cauliflower florets and a minced garlic clove with a splash of water. Cover and steam for about 8-10 minutes until very tender.
Transfer the steamed cauliflower and garlic to a bowl. Add the nonfat Greek yogurt and the olive oil. Mash until smooth and creamy. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous scoop of garlic mashed cauliflower. Serve immediately.
