PREPARATION
Pat dry the chicken breast and cut into small bite-sized pieces.
Heat half the olive oil in a non-stick skillet over medium-high heat. Add the chicken pieces and season lightly with salt and pepper if desired. Cook until the chicken is crispy and cooked through, about 5-7 minutes. Remove chicken and set aside.
In the same skillet, add the remaining olive oil. Sauté minced garlic and grated ginger until fragrant, about 30 seconds.
