INGREDIENTS
4 oz Lean Ground Beef (90% lean)
1/2 cup Black Beans (no salt added)
1/2 medium Sweet Potato
1/4 cup diced Red Bell Pepper
2 tbsp diced Red Onion
1 tsp Taco Seasoning
Olive Oil Spray
PREPARATION
Preheat your oven to 400°F.
Dice the sweet potato into small cubes and toss lightly with a spray of olive oil and a pinch of salt if desired. Spread them on a baking sheet and roast for 20-25 minutes until tender and lightly browned.
While the sweet potatoes roast, heat a non-stick skillet over medium heat and lightly spray with olive oil.
Add the lean ground beef to the skillet and cook, breaking it apart as it browns. Once mostly cooked, stir in the taco seasoning and a splash of water to allow the spices to distribute evenly.
After the beef is cooked through, add the black beans, diced red bell pepper, and red onion to the skillet. Stir and cook until the vegetables are just tender, about 3-4 minutes.
Assemble your bowl by layering the roasted sweet potatoes and the beef and bean mixture. Garnish as desired and serve immediately.
