PREPARATION
Preheat your oven to 400°F.
Wash the baby potatoes and cut them in half if they are larger. Toss the potatoes with olive oil, a pinch of salt, and a little freshly ground pepper.
Spread the potatoes on a baking sheet and roast for 20-25 minutes until golden and tender, stirring halfway through.
