PREPARATION
Preheat your oven to 400°F (200°C). Peel (if desired) and cube the sweet potato into bite-sized pieces, then toss with a drizzle of olive oil, salt, and pepper. Spread the sweet potato cubes evenly on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.
