7 oz Prawns
2 cups Cauliflower Rice
3 tsp Olive Oil
2 cloves Garlic
1 tbsp Lemon Juice (from ½ lemon)
½ medium Red Bell Pepper, diced
1 tbsp Fresh Parsley, chopped
Salt and Pepper to taste
PREPARATION
Rinse and pat dry the prawns. Season lightly with salt and pepper.
Heat 1 tsp of olive oil in a skillet over medium-high heat. Add the prawns and minced garlic, cooking for about 2-3 minutes per side until the prawns turn pink and opaque. Squeeze half lemon over the prawns during the last minute of cooking. Transfer the prawns to a plate and set aside.
