Protein-Packed Cauliflower Mac with Sharp Cheddar
A delightful twist on traditional mac and cheese, featuring tender cauliflower as the pasta substitute, juicy grilled chicken for added protein, and a rich blend of sharp cheddar mixed with creamy Greek yogurt and a hint of olive oil. The dish packs comfort and a satisfying flavor profile perfect for any meal of the day.
INGREDIENTS
3 oz Chicken Breast (cooked, roasted)
150 g Cauliflower (chopped)
1 oz Sharp Cheddar Cheese, shredded
1/4 cup Nonfat Greek Yogurt
1 tsp Olive Oil
Pinch Salt
Pinch Black Pepper
Dash Garlic Powder
PREPARATION
Preheat your oven to 400°F.
Cut the cauliflower into bite-sized florets. Steam or boil them until tender, about 7-10 minutes, then drain well.
Season the chicken breast with a pinch of salt, pepper, and garlic powder. Grill or pan-sear the chicken over medium heat until fully cooked, about 6-7 minutes per side. Once cooked, dice or shred the chicken.
In a large mixing bowl, combine the steamed cauliflower florets with the diced chicken. Stir in the nonfat Greek yogurt, then gently toss in the shredded sharp cheddar cheese.
Drizzle the olive oil over the mixture and season with additional salt, pepper, or garlic powder if desired.
Transfer the mixture to an ovenproof dish and place in the preheated oven for 8-10 minutes, or until the cheese is nicely melted and bubbly.
Remove from oven, mix gently, and serve warm.
