Enjoy a beautifully seared salmon paired with crisp steamed asparagus and a silky cauliflower mash enlivened by a hint of Greek yogurt and olive oil. This dish combines robust flavors with a light, yet satisfying, texture that perfectly aligns with your dinner goals.
INGREDIENTS
5 oz Salmon Fillet
1 cup Asparagus
1.5 cups Cauliflower Florets
0.25 cup Nonfat Greek Yogurt
1 tsp Olive Oil
Salt & Pepper, to taste
1 Lemon Wedge
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Sear the salmon, skin side down first if applicable, for about 3-4 minutes per side until nicely browned and cooked through.
While the salmon is cooking, steam the asparagus in a steamer or in a covered pan with a splash of water for about 4-5 minutes until just tender.
Meanwhile, steam the cauliflower florets until very tender, about 8-10 minutes. Transfer the steamed cauliflower to a bowl.
Mash the cauliflower with nonfat Greek yogurt and olive oil until smooth. Season with salt and pepper to taste.
Plate the salmon alongside the steamed asparagus and a serving of the cauliflower mash. Squeeze the lemon wedge over the salmon for an added burst of flavor.
