INGREDIENTS
4 oz Lean Ground Turkey
2 slices Turkey Bacon
1 large Egg
1/4 cup Whole Wheat Breadcrumbs
1/4 medium Onion
1 clove Garlic
1 tsp Smoked Paprika
Salt and Pepper to taste
1 tbsp BBQ Glaze
PREPARATION
Preheat your oven to 375°F.
In a bowl, combine the lean ground turkey, chopped onion, minced garlic, egg, whole wheat breadcrumbs, smoked paprika, salt, and pepper. Mix until just combined, being careful not to overwork the mixture.
Shape the mixture into a small loaf shape on a piece of parchment paper.
Drape the turkey bacon slices over the top of the meatloaf, gently pressing to adhere.
Bake in the preheated oven for 25-30 minutes, or until the meatloaf reaches an internal temperature of 165°F.
During the last 5 minutes of baking, brush the top of the meatloaf evenly with the BBQ glaze and return to the oven to let the glaze set.
Remove from the oven, allow to rest for a few minutes, then slice and serve.
