1/2 cup Mixed Vegetables (~80g)
25g Whole Wheat Dough
3/4 cup Nonfat Greek Yogurt (~170g)
5g Fresh Mint Leaves
5g Fresh Cilantro
1 tsp Lemon Juice
1 tsp Spice Mix (Cumin, Turmeric, Coriander, Salt & Pepper)
PREPARATION
Preheat the oven to 400°F (200°C).
In a bowl, combine the cooked brown lentils with the mixed vegetables. Add the spice mix and gently stir until the ingredients are evenly seasoned.
On a lightly floured surface, roll out the whole wheat dough to form thin wrappers. Place a spoonful of the lentil-vegetable mixture in the center of each wrapper.
Fold the wrapper into a triangular pocket, sealing the edges by lightly moistening with water.
Place the assembled samosas on a baking tray lined with parchment paper and bake for 15-20 minutes, or until the dough turns golden and crisp.
Meanwhile, prepare the mint chutney by blending the nonfat Greek yogurt, fresh mint leaves, fresh cilantro, lemon juice, and a pinch of salt until smooth.
