0.25 tsp Black Pepper
PREPARATION
Preheat your oven to 425°F.
Rinse the baby potatoes and slice them in halves if they are larger. Toss the potatoes with a pinch of salt, pepper, and a drizzle of olive oil if desired.
Spread the potatoes on a baking sheet and roast them in the oven for about 20-25 minutes until they become golden and tender, stirring halfway through for even cooking.
While the potatoes are roasting, pat the steak dry with paper towels. Season both sides with salt and black pepper.
Heat a skillet (preferably cast iron) over medium-high heat. Once hot, add the steak and sear for about 3-4 minutes on each side for medium-rare, or adjust timing for your preferred doneness.
