Enjoy a perfectly seared salmon paired with vibrant garlic-infused green beans and a creamy cauliflower mash. This dish provides a satisfying balance of rich protein from the salmon and wholesome, low-carb vegetables, all lightly enhanced with olive oil and fresh garlic for an aromatic finish.
INGREDIENTS
6.5 ounces Salmon Fillet
1 cup Cauliflower
0.75 cup Green Beans
0.5 tablespoon Extra Virgin Olive Oil
1 Garlic Clove
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season with salt and pepper.
Steam or boil the cauliflower until tender, then drain.
In a small pot, sauté minced garlic with half the olive oil and lightly mash the cauliflower using a fork or immersion blender. Season with salt and pepper.
Blanch the green beans in boiling water for 2-3 minutes until bright green, then immediately transfer to an ice bath to stop cooking.
In a skillet over medium-high heat, add the remaining olive oil. Sear the salmon skin-side down for about 3-4 minutes, then flip and cook for another 3-4 minutes until desired doneness is reached.
Toss the blanched green beans in a pan with a bit of the sautéed garlic (from the cauliflower mash process) for extra flavor.
Plate the seared salmon alongside a generous serving of garlic green beans and a smooth cauliflower mash. Serve immediately and enjoy.
