Place the cod on a parchment-lined baking tray and bake in the preheated oven for about 12-15 minutes, until the fish is opaque and flakes easily with a fork.
Meanwhile, steam the broccoli until it is bright green and tender, about 5-7 minutes.
Drizzle the remaining olive oil over the steamed broccoli and season with a pinch of salt.
Plate the baked cod with a serving of roasted sweet potato and steamed broccoli, and serve immediately.
