PREPARATION
Preheat your oven to 400°F.
Toss the baby potatoes with extra virgin olive oil, salt, and pepper, and spread them on a baking sheet. Roast in the oven for about 20-25 minutes until crisp on the outside and tender on the inside.
While the potatoes roast, season the sirloin steak with salt and pepper on both sides.
