INGREDIENTS
7 oz Salmon Fillet
1 cup Steamed Asparagus
1 cup Cauliflower
1 tsp Olive Oil
1 tbsp Nonfat Greek Yogurt
2 tbsp Mixed Fresh Herbs
1 tsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Pat the salmon dry with a paper towel and season generously with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down. Sear for about 4 minutes on each side until the fish is cooked through and has a crisp exterior.
Meanwhile, steam the asparagus until tender, about 4-5 minutes.
For the cauliflower mash, steam the cauliflower florets until very tender, about 8-10 minutes. Transfer to a bowl and mash with a fork or immersion blender until smooth.
Stir in the olive oil, nonfat Greek yogurt, fresh herbs, and lemon juice into the mashed cauliflower. Adjust salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a serving of the herb-cauliflower mash. Serve immediately and enjoy!
