INGREDIENTS
200g Cauliflower
1 cup Nonfat Greek Yogurt
1/2 cup Chickpeas
1 oz Reduced-Fat Cheddar Cheese
2 tbsp Nutritional Yeast
1 tsp Olive Oil
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Rinse and drain the chickpeas, then toss them with olive oil, garlic powder, onion powder, salt, and pepper. Spread them on a baking sheet in a single layer and roast for 20-25 minutes until crispy, stirring halfway through.
While the chickpeas are roasting, chop the cauliflower into florets and steam or boil until very tender, about 10 minutes.
In a food processor or high-speed blender, combine the steamed cauliflower, Greek yogurt, nutritional yeast, salt, and pepper. Blend until smooth and creamy.
Pour the cauliflower sauce into a baking dish, and sprinkle the roasted chickpeas evenly on top. Add the shredded reduced-fat cheddar cheese over the layer.
Bake in the preheated oven for 10-12 minutes, until the cheese is slightly melted and the dish is heated through.
Remove from the oven, let cool slightly, and serve warm.
