Enjoy a delightful dinner of perfectly seared salmon paired with crisp garlic-infused green beans and a creamy cauliflower mash enriched with nonfat Greek yogurt. This dish combines aromatic garlic with the natural flavors of fresh produce and salmon, creating a balanced, light meal that is both satisfying and delicious.
INGREDIENTS
5 oz Salmon Fillet
1 cup Green Beans
1.5 tsp Olive Oil
1 cup Cauliflower florets
3 tbsp Nonfat Greek Yogurt
2 cloves Garlic, minced
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season generously with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down (if applicable) and sear for about 3-4 minutes each side until the salmon is just cooked through.
While the salmon is cooking, bring a pot of water to a simmer and add a pinch of salt. Add the cauliflower florets and a clove of minced garlic. Steam until tender, about 8-10 minutes.
Once the cauliflower is soft, drain and transfer to a bowl. Add the nonfat Greek yogurt and mash until smooth. Season with salt and pepper to taste.
In another pan, heat the olive oil over medium heat. Add the green beans along with the remaining minced garlic. Sauté for about 4-5 minutes until the beans are tender-crisp but still vibrant.
Plate the dish by spooning a serving of cauliflower mash, placing the seared salmon on top or alongside, and adding the garlic green beans on the side. Serve immediately.
