100g Seitan

PREPARATION
Preheat your oven to 400°F (200°C). Press the tofu for at least 15 minutes to remove excess moisture, then cut it into cubes. Toss the tofu cubes with a teaspoon of olive oil, and season lightly with salt and pepper.
Place the tofu on a lined baking sheet and bake for approximately 25-30 minutes, turning halfway through, until the edges become crispy.
While the tofu bakes, cut your vegetables (such as bell peppers and zucchini) into bite-sized pieces. Toss them lightly with a small drizzle of olive oil, salt, and pepper, then spread them on another baking sheet. Roast in the oven for about 20 minutes until tender.
