INGREDIENTS
3 oz Feta Cheese
2 cups Fresh Spinach
1 large Egg
2 Egg Whites
2 sheets Phyllo Dough
1/4 small Onion, diced
1 tsp Olive Oil
1 tbsp Fresh Dill
Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F.
In a skillet, warm the olive oil over medium heat and briefly sauté the diced onion until softened, about 2-3 minutes.
Add the fresh spinach and cook until just wilted, stirring occasionally. Remove from heat and let cool slightly.
In a bowl, whisk together the whole egg and egg whites. Stir in crumbled feta cheese, chopped fresh dill, and the cooled spinach-onion mixture. Season with salt and pepper to taste.
Lay out the phyllo dough sheets on a clean surface. If desired, brush the sheets lightly with a touch of olive oil for extra crispiness.
Spoon the spinach feta mixture onto one phyllo sheet, leaving a small border around the edges. Top with the second phyllo sheet and gently press down to seal.
Place the assembled pie onto a baking tray and bake for 20-25 minutes, or until the phyllo is crisp and lightly golden.
Remove from the oven, allow to cool slightly, then cut into pieces and serve warm.
