Garlic-Herb Chicken with Roasted Spaghetti Squash
Enjoy a vibrant, savory dish featuring tender garlic-herb seasoned chicken paired with roasted spaghetti squash. The chicken is marinated in a blend of olive oil, garlic, rosemary, and thyme, then perfectly roasted to bring out its juicy flavor, while the spaghetti squash adds a delightful lightness and natural sweetness.
INGREDIENTS
1 piece Chicken Breast (170g)
1 cup Spaghetti Squash (150g)
1 tablespoon Extra Virgin Olive Oil (15g)
1 Garlic Clove
0.25 teaspoon Fresh Rosemary, chopped
0.25 teaspoon Fresh Thyme, chopped
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Slice the spaghetti squash in half lengthwise, remove the seeds, and drizzle with a bit of olive oil, salt, and pepper. Place the halves cut side down on a baking sheet.
Roast the spaghetti squash in the oven for about 25-30 minutes until tender. Once cooled slightly, use a fork to gently scrape the flesh into spaghetti-like strands.
While the squash roasts, prepare the chicken. In a small bowl, combine the extra virgin olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper.
Pat the chicken breast dry and rub the garlic-herb mixture all over the chicken.
Place the chicken on a separate baking tray and roast in the oven (or alongside the squash if space permits) for about 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
Slice the chicken and serve it over a bed of roasted spaghetti squash. Garnish with additional herbs if desired.
