INGREDIENTS
6 oz Salmon Fillet
1 oz crushed Raw Unsalted Pistachios
2 tbsp Fresh Orange Juice
1 tbsp Fresh Lemon Juice
1 tsp Fresh Ginger, grated
1/2 tsp Honey
1/2 tsp Olive Oil
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Pat the salmon fillet dry with a paper towel. Season lightly with salt and pepper on both sides.
Place the crushed pistachios on a small plate. Press the top side of the salmon firmly into the pistachios to create an even crust.
Lay the salmon, crust side up, on the prepared baking sheet.
In a small bowl, whisk together the fresh orange juice, lemon juice, grated ginger, honey, and olive oil to form the citrus-ginger glaze.
Drizzle half of the glaze over the salmon, reserving the rest for finishing after baking.
Bake the salmon in the preheated oven for about 10-12 minutes or until the fish flakes easily with a fork.
Remove the salmon from the oven and drizzle with the remaining glaze. Let it rest for a minute before serving.
