5 oz Salmon Fillet
6 Asparagus Spears
1 cup Cauliflower (mashed)
1 tsp Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Toss the asparagus spears with half of the olive oil, a pinch of salt and pepper, and place them on a baking sheet.
Roast the asparagus in the preheated oven for about 10-12 minutes until tender.
Meanwhile, steam the cauliflower florets until soft. Then mash with the remaining olive oil, garlic (minced) and lemon juice, seasoning with salt and pepper to taste.
Pat the salmon fillet dry and season with salt and pepper. Heat a non-stick skillet over medium-high heat.
Sear the salmon, skin side down if applicable, for about 3-4 minutes per side until cooked through and nicely browned.
