INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower (florets)
2 cloves Garlic
2 tsp Olive Oil
1/4 cup Nonfat Greek Yogurt
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat 1 tsp of olive oil in a skillet over medium-high heat. Once hot, sear the salmon for about 3-4 minutes per side until a golden crust forms and the inside is just opaque.
While the salmon is cooking, steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until tender but still crisp.
For the mash, steam the cauliflower florets along with the garlic cloves for about 8-10 minutes until very tender.
Transfer the steamed cauliflower and garlic to a blender or food processor. Add the remaining 1 tsp olive oil and the nonfat Greek yogurt. Blend until smooth, then season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of garlic cauliflower mash. Serve warm.
