Enjoy a vibrant stir-fry featuring crispy tofu cubes, edamame, and a medley of fresh vegetables tossed in a savory sesame glaze. The dish boasts a satisfying texture and aromatic flavors from garlic and sesame, making it a delicious and balanced meal.
INGREDIENTS
250g Firm Tofu
80g Shelled Edamame
1 medium Red Bell Pepper
1 cup Broccoli
1 medium Carrot
½ Yellow Onion
2 cloves Garlic
1 tbsp Soy Sauce
1 tsp Maple Syrup
1 tsp Sesame Oil
1 tsp Sesame Seeds
1 tbsp Cornstarch
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut into 1-inch cubes.
Lightly coat the tofu cubes with cornstarch to achieve a crisp exterior.
Heat a non-stick pan over medium-high heat and add a tiny splash of sesame oil. Sauté the tofu until all sides are golden and crispy. Remove tofu and set aside.
In the same pan, add chopped garlic and slices of yellow onion; sauté for about 1 minute until fragrant.
Add chopped red bell pepper, broccoli florets, and sliced carrot to the pan. Stir-fry the vegetables for 3-4 minutes until slightly tender but still crisp.
Return the crispy tofu to the pan along with shelled edamame.
Mix in the soy sauce, maple syrup, and an extra drizzle of sesame oil if desired. Toss everything gently until well combined and heated through.
Plate the stir-fry and finish by sprinkling sesame seeds on top. Serve warm and enjoy!
