Enjoy a bright and flavorful plate of seared scallops kissed with citrus and garlic, paired with airy, herb-infused cauliflower rice. The dish combines the delicate, tender texture of scallops with a vibrant medley of lemon and orange accents, finished with a drizzle of olive oil and fresh herbs.
INGREDIENTS
8 oz Sea Scallops
2 tsp Olive Oil
1 cup Cauliflower Rice
1 clove Garlic
1 tbsp Lemon Juice
1/4 cup Orange Segments
2 tbsp Fresh Herbs (Parsley & Cilantro)
Salt & Pepper to taste
PREPARATION
Pat the scallops dry with paper towels and season lightly with salt and pepper.
Heat 1 tsp of olive oil in a non-stick skillet over medium-high heat. Add minced garlic and sauté until fragrant, about 30 seconds.
Place the scallops in the skillet and sear for about 2 minutes on each side until a golden crust forms. Remove and set aside.
In the same skillet, add the cauliflower rice and the remaining olive oil. Sauté for 3-4 minutes until slightly tender, stirring frequently.
Stir in lemon juice, orange segments, and chopped fresh herbs into the rice. Adjust seasoning with salt and pepper.
Plate the herb cauliflower rice and top with the seared scallops. Drizzle any remaining pan juices over the dish before serving.
