6 egg whites (approx. 198g)
2 slices turkey bacon
1 cup raw spinach
1 tablespoon olive oil
100g roasted sweet potato
PREPARATION
Preheat the oven to 400°F (200°C) for roasting the sweet potato.
Peel and dice the sweet potato into small cubes. Toss with a bit of olive oil, salt, and pepper, and spread evenly on a baking tray.
Roast the sweet potato in the preheated oven for about 20-25 minutes until tender and slightly crispy on the edges.
While the sweet potato is roasting, heat the remaining olive oil in a nonstick skillet over medium heat.
Crisp the turkey bacon in the skillet for 2-3 minutes on each side. Remove and set aside on a paper towel to drain.
Add spinach to the skillet and stir for about 1 minute until just wilted.
